Homemade Butterscotch Pudding

Look how easy it is to make homemade pudding. I have made this recipe using 1% low fat milk and full fat whole milk but I do not recommend fat-free milk. - Jenny Jones

Makes: 4 servings

Homemade Butterscotch Pudding


  • 1/2 cup brown sugar, lightly packed
  • 3 Tablespoons cornstarch
  • 1/8 teaspoon salt
  • 2 cups milk (1%, 2%, or whole milk)
  • 1 Tablespoon butter
  • 1 teaspoon vanilla extract


  1. In a medium saucepan, combine the brown sugar, cornstarch and salt until there are no lumps.
  2. Slowly whisk in the milk until smooth.
  3. Cook over medium heat, stirring constantly, until it comes to a boil.
  4. Once it boils it will thicken in less than a minute so keep stirring until it’s thick.
  5. Remove from heat and add butter and vanilla. Stir until butter is incorporated.
  6. Pour into serving cups and serve warm or refrigerate.

    Where have you been Jenny? All of a sudden your recipes stopped along with the videos. I have every recipe you’ve offered and look always for more. Tonight will try the butterscotch pudding.Hard to keep brown sugar on hand in the hot humid weather.Always gets hard as a rock no matter what suggestions I’ve tried. Any help?

    Sounds delicious! I’ll definitely make this, but I’ll substitute non-fat milk. I make homemade puddings – chocolate or vanilla – frequently and always with non-fat milk. Maybe this recipe is different, but I’ll have to find out 🙂
