Cinnamon-Glazed Apple Brownies

These whole wheat brownies use one large 1/2 pound Granny Smith apple. Be sure to toast the nuts first for the best flavor. I prefer a mix of toasted walnuts and pecans. (this recipe has been updated and simplified from the original) - Jenny Jones

Cinnamon-Glazed Apple Brownies


  • 1 cup whole wheat pastry flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon

  • 1/4 cup Greek yogurt (I use Fage 2% - never fat free)
  • 1 egg
  • 1/4 cup water

  • 2 cups diced apple (1/2-inch pieces)
  • 1/2 cup chopped toasted walnuts or pecans (or a mix of both)

  • Glaze: (optional)
  • 1/2 cup powdered sugar
  • 1/8 teaspoon cinnamon
  • 1/4 teaspoon vanilla
  • about 2 teaspoons milk


  1. Preheat oven to 350°F.
  2. Grease a 9 x 9-inch square pan.
  3. Combine dry ingredients in a bowl and set aside.
  4. In a small bowl, combine yogurt, egg, and water until smooth. Set aside.
  5. Peel, core, and dice apples. Chop walnuts.
  6. Stir yogurt mixture into flour mixture.
  7. Fold in apples and nuts. Mixture will be very thick.
  8. Spread evenly into pan and bake for about 20 minutes.
  9. Let cool for 5 minutes.
  10. Combine glaze ingredients and drizzle over top.

    Can we use brown sugar instead of white sugar? Although the specific type of sugar isn’t mentioned..

      I would not recommend brown sugar. In most recipes, sugar always means white sugar unless brown is specified.

    If I drain the regular yogurt on a cheesecloth to get rid of the excess water , will this make it close to the Greek yogurt , since I don’t have Greek yogurt ! Thanks

    If I make this witth regular yogurt (not Greek), should I omit the 1/4 c of water, since regular yogurt is thinner than Greek?

      I add water because the batter is too thick to spread into the pan so use your judgement. The only purpose the water serves is to thin the batter a little. If it has the consistency of a thick brownie batter, you may not need the water.

    Can you do this with no yogurt ???? I have none and am dying to try this. Anything I can use in place of yogurt? Applesauce maybe?

      The yogurt provides acidity to react with the baking soda, and a little fat and moisture, which you would not likely get from apple sauce. The only substitute I can think of would be reduced fat sour cream.

      I’m just guessing but I think that would work as long as it’s not fat-free.

    Hi Jenny. Can these be made with a/p flour? Buying a bag of the whole wheat pastry flour and only using 1 cup then having it sit in the cupboard for a while isn’t cost effective for me. Also 1 of my roommates has gluten issues so wondering if this can be made with a gluten free type of product?

      These brownies can be made with all-purpose flour but I have no experience baking with gluten free products. From what I know, it’s not always easy and if you use gluten-free flour you usually need to add xanthan gum but I don’t know what other changes would need to be made to my recipe. She should look for a specific gluten-free recipe.
