Best pepperoni pizza ever!

PeppPizza_9556If you like super crispy pizza like I do, you will LOVE this recipe.  It’s a healthier pizza than most, and the crust is so crispy you can hear it crackle when you slice it. That comes from using a pizza pan with holes. And by using instant yeast, you don’t have to rise the dough so that saves almost an hour.  You do all your prep while the oven heats up and 15 minutes later…  you and your pie hole will be very happy. Meyer lemon brownies are almost ready

There is a meyer lemon tree in my back yard and I have more lemons than I can use, or at least I did. I decided to make lemon brownies and I’ve been through more than a dozen lemons already trying to get the brownies just right and I think they’re almost there. I’ll try one more adjustment and then I’ll post the recipe. And by the way, there’s no butter in the recipe and it’s all in one bowl. The recipe is super easy and they taste out of this world. Mediterranean diet lowers risk of heart attack, stroke

This was the lead story on the national news last night. I’ve always believed in the health benefits of the Mediterranean diet and the research is compelling. These healthy meals include olive oil, nuts, fish, fruit, vegetables, and a glass of wine every day. I won’t say I told you so but I might have a glass of red wine to celebrate!

I love my vegetable pasta!

VegPasta_9566I got a late start thinking about dinner and decided to make my vegetable pasta. As simple, easy recipes go, this is the best, and one of the healthiest. As long as you have some fresh vegetables in the fridge, you can put this together in 20 minutes. Tonight, I made it with broccoli, asparagus, kale, spinach, and bowties. Cook some beets

Besides my awesome borscht recipe that’s coming soon, beets are really good roasted in the oven and here’s an easy recipe: Scrub clean, dry and rub with oil. Wrap in foil, place on tray. Roast at 400 degrees for 35 minutes to an hour depending on size.  Yesterday my oven was busy so I put on some latex gloves, peeled and cut the (uncooked, raw) beets into chunks. Then I steamed them for about 25 minutes and we ate them plain. They don’t need anything added at all because they are so sweet. You can’t beat beets!!

My beef stew recipe

If you’re looking for an old fashioned beef stew recipe, you will love this one. The meat is so tender you can cut it with a fork and the potatoes and carrots are full of flavor. It’s a pretty easy beef stew recipe. I dredge the meat in seasoned flour, brown it in olive oil, then it cooks in beef stock for an hour and a half. Long cooking is what makes the meat so tender and using beef stock instead of water makes a delicious beef stew.

I make my own beef stock and keep it in the freezer to use for this delicious dinner recipe and by the way, beef stew tastes even better the second day. As comfort foods go, homemade beef stew is one of the best. It does take time but it’s mostly unattended and really worth it. Click here for the recipe. – Jenny Jones

Hash Browns

When hash browns are just right, there’s nothing better with breakfast… crisp and golden on the outside (especially those crunchy edges!) and moist and tender on the inside… that’s how perfect hash browns from scratch should be.
